Ingredients

Main Ingredients:

  • 1 cup Suvarnankur Basmati Rice (washed & soaked for 15–20 mins)
  • ½ cup moong dal (split yellow lentils – washed)
  • 1 tbsp ghee (clarified butter) or oil
  • 1 tsp cumin seeds
  • 1 bay leaf (optional)
  • 1 small onion – chopped (optional, can skip for a light version)
  • 1 tomato – chopped
  • 1 green chili – slit (optional)
  • ½ tsp turmeric powder
  • Salt to taste

Vegetables (optional but recommended):

  • ½ cup carrots – chopped
  • ½ cup beans – chopped
  • ½ cup green peas
  • 1 small potato – diced

For Garnish:

  • Fresh coriander leaves – chopped
  • A spoon of ghee

Step-by-Step Instructions

Step 1: Wash & Prep

  • Wash Suvarnankur Basmati Rice and moong dal thoroughly
  • Soak rice for 15–20 mins for better fluffiness
  • Chop vegetables if using

Step 2: Cook the Base

  • Heat ghee/oil in a pressure cooker or deep pan
  • Add cumin seeds (and bay leaf if using). Let them splutter
  • Add onions → sauté until soft
  • Add tomatoes, green chili, and turmeric → cook until mushy
  • Add all vegetables → stir for 2–3 minutes

Step 3: Add Rice & Dal

  • Add soaked rice and washed dal into the pan
  • Mix gently with spices and vegetables
  • Add 4–5 cups of water (for softer khichdi, add more water)
  • Add salt to taste

Step 4: Pressure Cook

  • In pressure cooker: 2–3 whistles on medium flame, then let pressure release naturally
  • In pan: Cover and simmer for 25–30 mins, adding water as needed until rice and dal are soft

Step 5: Serve Warm 💛

  • Open lid and mash lightly with a spoon for a smooth texture (optional)
  • Garnish with coriander and a spoon of ghee on top
  • Serve hot with papad, pickle, or curd
